I made two special items for Kale's lunch this week - apple, chicken & raisin salad (recipe below), and yam & jam muffins. Other than that, most of the items are repeats from week 1, 2, & 3. I also added more pre-packaged stuff this week, like apple sauce, yogurt, and laughing cow cheese. It's nice to have a few of these things handy to fill up an empty spot in the lunch bots when you're trying to get a lunch together at 10pm!
Apple, Chicken & Raisin Salad
1 apple, cubed
2 cups of chicken breasts
1 handful of raisins
pinch of cinnamon
1/4 cup of mayo
These look great- do they report back to you how much he eats? I'm always afraid if I switch up my daughter's lunch too much that she won't eat it.
ReplyDeleteKale's a really good eater so his teachers normally only say something if he didn't eat well (usually because they had a special snack for someone's birthday or something). I'm lucky to have such a great eater!
